We have chosen to introduce our mountain pasture terroir through a culinary journey in five sequences. Our 5-course single menu evolves: it changes regularly and in small steps, with nature as its inspiration, the season as its compass and Switzerland as its perimeter.

Welcoming Broth
Rillettes du Léman, pickled hogweed and grilled kale.
Poultry liver tart and bitter salad
Potato and squash noodles, walnut praline, crayfish bisque
Shredded duck, garden-grown haricots secs and a rich leek jus with floral oils.
Confit of Pêche du Léman in a beurre noisette sauce with cresson de fontaine, herbs and a sabayon, served with a bouillon of the lake and a brioche with a flaky pastry.
Chou de Milan and pork pâté, pork consommé and passata, bood sousage, meatloaf, celeriac and kimchi.
