We only work with raw and whole products, and we value the maximum of what we can within the kitchen. This is possible thanks to the incredible quality of what the Swiss terroir and our producers offer us:
Pascal Tercier in Charmey for his cattle (Hinterwald, Grisons); Yvon Brodard with his alpine cheeses made a few hundred meters away from the restaurant ; Jacques Perritaz in Treyvaux for his Botzi pears and his enchanting ciders; the Sapalet farm in Rossinière for their free-range pig and alpine lamb
